• Job Title: Sous Chef - Retail

• Location: Various Heritage Portfolio venues and retail sites

• £35,360 per annum 

• 40Hours / 5days over 7days

Job Introduction 

Heritage Portfolio is seeking a talented, adaptable, and passionate Regional Retail Sous Chef to support our culinary operations across our diverse retail business. This is an exciting opportunity for an experienced chef who thrives in a fast-paced environment, enjoys variety in their work, and is passionate about delivering exceptional food experiences.

As a Regional Retail Sous Chef, you will provide operational support to culinary teams across multiple retail locations and selected venues, ensuring the consistent delivery of high-quality food and service standards. You will play a key role in supporting kitchen teams during peak periods, staff absences, new openings, and business-critical projects.

In addition to operational support, you will work closely with senior culinary leadership to assist in the development, testing, and implementation of new food concepts, menus, and retail propositions, helping to drive innovation across the business.

What You'll Do:

• Support culinary teams across Heritage Portfolio's retail sites and venues as required.
• Maintain high standards of food quality, presentation, food safety, and kitchen hygiene.
• Assist with menu development, recipe creation, and product innovation.
• Support the launch and delivery of new food concepts and retail initiatives.
• Provide leadership, coaching, and guidance to kitchen teams during assignments.
• Ensure compliance with company procedures, HACCP standards, and health & safety regulations.
• Assist with stock management, ordering, and cost control where required.
• Work collaboratively with venue managers, chefs, and operational teams to ensure a seamless guest experience.
• Act as an ambassador for Heritage Portfolio's culinary standards and values across all locations.

What You Bring:

• Previous experience in a Sous Chef role within a high-volume retail, hospitality, catering, or events environment.
• Strong culinary skills with a passion for fresh, seasonal, and innovative food.
• Flexibility and willingness to travel between sites and venues.
• Experience supporting multiple operations or working in a relief chef capacity is advantageous.
• Excellent organisational and communication skills.
• A positive, proactive approach with the ability to adapt quickly to new teams and environments.
• Sound knowledge of food safety, health & safety, and kitchen management practices.
• Ability to motivate and support colleagues while maintaining high standards under pressure.
