As our Head Chef you will work with the Executive Head Chef to drive the culinary delivery at one of Nottingham’s most prestigious venues. You will deliver exceptional culinary experiences for events, client tastings, and more.

Your role will involve working closely with the Executive Head Chef to develop and execute culinary plans and concept design.  You will be responsible for shaping the food offer strategy, driving innovation, maximizing profitability, and delivering an exceptional service that exceeds our client’s targets and expectations.

MAIN RESPONSIBILITIES

  • Delivery of consistent levels of service, within the Company's standards, to support contract specifications, service offer and agreed performance, qualitative and financial targets
  • Compliance to company and statutory regulations relating to safe systems of work, health and safety, hygiene, cleanliness, fire and COSHH
  • Client and consumer retention and satisfaction
  • Development of supplier relationships to support the business strategy
  • Development and succession planning of culinary talent
  • Segment growth.   
  • Creative development of all offers across site, aligned to growth strategy
  • Specifically to ensure that the venue remains ahead of the market in understanding and delivering creative and relevant innovation 
  • Continual innovation is demonstrated with regards to menu and offer development 
  • Present each menu design at relevant client tastings and be able to speak passionately about each dish
  • Working with internal departments such as Marketing and Operations to define the offers that the business requires 

THE IDEAL CANDIDATE

You will be a proactive and empowered Chef with a creative approach to food and a passion for delivering exceptional experiences.  You will have extensive knowledge of the premium restaurant sector and be accustomed to working in large venues delivering exceptional food offerings.   Strong leaderships skills are essential, as when needed, there is an expectation for you to manage large volumes of casual staff as well as your regular team. You also must be available to work 5 days over 7 which will include some evenings and weekends.

You will also have:

Essential:

  • Experience in a high volume environment – major events or large scale banqueting operation
  • A passionate interest in the catering industry – knowledge of current trends, well read, eats out in interesting restaurants on a regular basis, talks about and gets excited about food
  • Excellent communication skills and the ability to present to colleagues, peers and clients
  • Financial awareness and understanding of a food profit and loss account and articulate how to control food cost and generate positive food margin
  • Proven ability to manage and lead a team of chefs 
  • Ability to communicate at all levels and have excellent presentation skills
  • NVQ Level 2 in Culinary Arts (or qualified by experience)
  • Excellent presentation skills

Desirable:

  • Supervising Food Safety Level 3 qualification (can be trained on site)
  • IOSH Managing Safely or similar qualification (can be trained on site)
  • Experience of working with clients in a contract catering environment 
  • Staff training experience
