Job Introduction

Are you interested in the French Classics or is Modernist Cuisine more your style? 

 

We are currently looking for individuals to join our Apprentice Brigade and we are offering Level 2 Commis Chef Apprenticeships or Level 3 Chef de Partie Apprenticeships to provide you with the foundations that you need to reach for the Michelin Stars.  

 

This exciting opportunity will include placements in four of Sodexo Live’s stunning and prestigious venues in London; The Royal Academy of Arts, The Wallace Collection, RAF Museum and Bateaux London, as well as a once in a lifetime placement alongside Raymond Blanc’s Michelin starred team at the extraordinary Le Manoir aux Quat’Saisons. In all placements you will be part of our dedicated and passionate brigade of chefs, turning the ordinary into extraordinary.  

 

You will also have the chance be part of the team working across our events business, at Royal Ascot and Chelsea Flower Show, working in prestigious kitchens and restaurants using the skills you have learnt across your placements. 

  

Throughout your apprenticeship you will be supported by a mentor and follow a blended learning approach delivered by our training provider HIT. With online platforms to build your knowledge, face to face sessions to grow your practical skills and attending workshops giving you skills in Knife Skills, Fish, Patisserie, Game & Offal, Vegetables & Proteins and Menu Planning you will then develop and showcase your dishes in our cafes and restaurants.   

 

No two days will be the same, however duties may include:  

  • Mise en place preparation for service  

  • Plating and food presentation  

  • Cooking dishes to head chef’s specification  

  • Working to reduce wastage within the kitchen  

  • Assisting senior members of the kitchen brigade before and during service

  • Punctual – we cater for some of the country’s most prestigious events such as the Chelsea Flower Show and Royal Ascot.  Our chefs need to be on time and work to schedule 

  • Passion for food – our chefs pride themselves on their ability to create forward thinking and exciting dishes 

  • Well organised – The Sodexo Live Academy offers experience at 4 flagship London sites, a placement at Le Manoir as well as specialist industry events. Candidates must be organised and well prepared to get the most from these opportunities
